Last month I shared my first food recipe, these delicious whole grain breakfast cookies, that you all seemed really into. Did any of you end up trying them? Seriously…they are SO good, you guys!
Most of you probably know that I have the world’s biggest sweet tooth — especially for anything with chocolate. But we are working towards a healthy lifestyle and our upcoming surgeries, we have to make some changes. I definitely want to be able to reach for something sweet and decadent but obviously still healthy.
I came across these delicious energy bites on Pinterest awhile back and I have been hooked since! They are incredibly easy to make, you don’t have to bake them and they are so good and filling for a light on-the-go snack. I like to take these to work and pop them in the fridge for a mid-afternoon pick me up — much better alternative than hitting the vending machine for M&M’s.
No Bake Chia Bites
Prep Time | 5 minutes
Assemble Time | 10 minutes
Servings | about 10 per batch
Ingredients
- 1 cup rolled oats
- 1/2 cup nut butter (I used almond butter)
- 1 tbsp chia seeds
- 2 tbsp shredded coconut
- 2 tbsp honey
- 1/2 tsp vanilla extract
- 1/4 cup dark chocolate chips
Instructions
1. Mix the oats, nut butter, chia seeds, coconut, honey and vanilla extract in a bowl.
2. Roll mixture into equal size balls. I always end up getting around 10 bites.
3. Place bites in the fridge for 30 minutes to firm them up.
4. Melt chocolate and drizzle over bites. Freeze for a 5-10 minutes.
5. Enjoy!
You can keep these in an airtight container for up to 5 days or so in the fridge.
