It’s been awhile since I’ve shared a recipe with you all and this one has to be one of my absolute favorites! Not only is it super simple, it’s healthy and delicious! I’m not kidding when I say that I eat this 4 out of the 7 days of the week — obsessed is an understatement and you guys must give it a try — I hope you like it as much as I do.
Quick & Easy Breakfast | Strawberry Chia Pudding
I think I’ve mentioned before that I started meal prepping a couple of months ago. I am not really an egg person so there aren’t many meal prep recipes out there without eggs. So when I stumbled upon this one I was really excited to give it a try. I found it here. I prep my meals on Sunday’s Monday thru Friday. I use wide-mouth mason jars and white lids to store these in the fridge. I portion off snack size baggies with granola and a separate baggie for chopped strawberries (or fruit of your liking.)
Ingredients
- 2 tbsp chia seeds
- 1/2 tsp vanilla extract
- 1 tbsp maple syrup
- 2 tbsp coconut milk yogurt
- 3/4 cup unsweetened almond milk
- dash of cinnamon
- toppings - strawberries & granola
Instructions
- Add all ingredients (EXCEPT the toppings) to a glass container with a lid.
- Mix all ingredients well.
- Let mixture chill in fridge for at least an hour.
- Once mixture has thickened, mix, add toppings and enjoy!
